Literature Survey of the Various Techniques Used in Listeria Intervention

A review of the scientific literature on the role of various intervention strategies on the control of Listeria monocytogenes in processed meats.

 

Objectives

To produce a literature review on the techniques used in Listeria intervention to identify the gaps in research.

Conclusions

For each category of intervention (organic acids; other preservatives; bacteriocins; thermal processes; irradiation; modified atmosphere packaging; high pressure; pulsed electric fields and electrolyzed oxid izing water; ultraviolet light; and ultrasound) a narrative and a list of references was provided.

Deliverable

 

A comprehensive literature review was prepared and made available to industry to provide guidance on implementing new technologies. The literature review assists in validating Listeria interventions in HACCP plans.
